1 cup cooked chickpeas, or canned chickpeas rinsed well
1 cup cherry tomatoes, halved
1 medium cucumber, diced
1 medium carrot, thinly sliced or grated

Fresh parsley or coriander, chopped

Garlic Dressing:
2 tablespoons extra virgin olive oil

Pinch of salt and black pepper

Method

In a large bowl combine the chickpeas, tomatoes, cucumber, carrot, onion, and leafy greens.
Whisk together olive oil, lemon juice, vinegar, garlic, mustard, salt, and pepper until smooth.
Pour the dressing over the salad and toss gently to coat.
Sprinkle with parsley or coriander before serving.
