Creamy Morning Glory & Egg Bake
A warm, comforting bake where creamy eggs meet fresh morning glory, topped with a golden crust that’s irresistible. Perfect for any time of the day

 

Ingredients

  • 6 organic free-range eggs

  • 150 ml organic whole milk or cream

  • 200 g fresh spinach

  • 150 g mushrooms, sliced

  • 1 onion, diced

  • 2 tbsp olive oil

  • Sea salt & pepper

Instructions

  1. Preheat oven to 180°C.

  2. Sauté onions and mushrooms in olive oil until soft. Add spinach until just wilted.

  3. Whisk eggs and milk in a bowl; season.

  4. Spread vegetables in a baking dish, pour egg mixture over.

  5. Bake for 25–30 minutes until set.

Serving suggestion: Perfect for breakfast or light lunch with sourdough bread.
