Ingredients

6 organic free-range eggs

150 ml organic whole milk or cream

200 g fresh spinach

150 g mushrooms, sliced

1 onion, diced

2 tbsp olive oil

Sea salt & pepper
Instructions

Preheat oven to 180°C.

Sauté onions and mushrooms in olive oil until soft. Add spinach until just wilted.

Whisk eggs and milk in a bowl; season.

Spread vegetables in a baking dish, pour egg mixture over.

Bake for 25–30 minutes until set.
